He accepted a scholarship to play football at the University of Central Florida (UCF), where he played defensive end for the UCF Knights from 2013 to 2016. In 2016, he was named American Athletic Conference Defensive Player of the Year after recording 11.5 sacks and 22 tackles for loss. As a senior in 2017, he had 56 tackles and 11 sacks.

Griffin’s left hand was amputated when he was four years old due to amniotic band syndrome. He wears a prosthetic on his left arm when playing football.

Shaquem Griffin was drafted by the Seattle Seahawks in the fifth round of the 2018 NFL Draft with the 141st overall pick. He became the first one-handed player to be drafted in NFL history.
